Overview

Freshroll serves Vietnamese rolls and bowls from a clean, materials-forward space in the Metreon. The build-out needed a warm natural palette that would hold up to high-volume fast-casual use — with a single architectural hero detail.

We fabricated the complete millwork and casework package: maple plywood cabinetry along the service line, maple plywood wainscoting throughout the dining area, wall panels, solid hard maple communal and bar tables, and a custom vertical-grain Douglas fir pass-through framework between the back-of-house and the guest counter.

The pass-through

The custom pass-through millwork was designed in-house and fabricated in solid vertical-grain Douglas fir — a wood that reads warm without getting sweet, and has the grain structure to hold its line in a commercial setting.

Turnaround was tight. Design, shop drawings, fabrication, finishing, and delivery all ran on an accelerated schedule to hit the GC's opening date. The piece was delivered to site ready for the finish trades.
